I used to love canning time, love to smell vinegar, and it was a family function at my great-grandmas. My job was to pack the jars (I was really good at it). I loved pickles the best.
I can't seem to grow a small garden now to save my life. Well the deer, rabbits, birds and other wild animals get lots of fresh veggies we get very few. However, my son and I made homemade peach preserves and loved it. He enjoyed it too. Would like to make strawberry-banana preserves an old friend gave us some, my family LOVED it, but can't find a recipe and bananas are so mushy not sure what proportains would work. Or if you can make just banana preserves (bought some banana butter at a farmers market- but guy wouldn't give out his recipe) I can get overripe bananas cheap. If anyone has these recipes please share them with me.
Place bananas, lemon juice, cherries, raisins, sugar, cinnamon, and nutmeg in a large saucepan. Mix well to combine. Bring to a hard boil and stir constantly for 1 minute. Remove from heat and immediately stir in pectin.
Ladle banana butter into sterilized hot jars and seal.
Yield: about 9 pints

Thanks so much. But the one this man had didn't have any other fruits or raisens in it. More a plain banana one! My hubby and son are quite picky! LOL!!!
