OVEN BARBECUED BEEF BRISKET
2 Tbsp. ground cumin seed
2 Tbsp. ground coriander seed
2 cloves garlic, finely minced
1/2 cup dark brown sugar
1 Tbsp. cayenne pepper
1 tsp. salt
1 Tbsp. freshly-ground black pepper
1/4 tsp. ground cinnamon
3 to 4 pounds fresh beef brisket
approx. 1 cup favorite barbecue sauce
Preheat oven to 300̊F.
Combine all of the seasoning ingredients in a bowl and rub the mixture into the beef. Place the brisket in a roasting pan, fat side up. Slowly cook the beef for 1 hour, turn the beef and cook for 1 hour more before covering with a tight-fitting lid. Continue to cook with the lid tightly in place for 2 to 2 1/2 hours more. This will render most of the fat. Pour barbecue sauce over the top of the brisket, and add water to just cover the bottom of the pan. Cook an additional 30 minutes. Carefully pour off and discard the fat. Allow the beef to rest for 20 to 30 minutes before serving.
