| Summer Bean Salad
2 hardboiled eggs, chopped
2 cans of dark red kidney beans (15oz ea), well drained but not rinsed
2 T sweet pickle relish
2 T finely chopped red onion
2 T chopped celery
1/2 cup salad dressing or mayonnaise (more or less may be used to taste)
salt and pepper to taste
Mix all of the ingredients together and chill at least 1 hour before serving
If using as a summer main dish add the diced meat and chill then toss with lettuce or other greens just before serving a quick, colorful dish for all-year-round meals in the summer it can make a nice maindish salad served with chopped lettuce and diced ham or chicken added in winter it is a nice side dish alternative to potato salad.
