What is your favorite Potato Soup recipe?

I was making potao soup last night for supper and got to thinking of all the different recipes I use for making it. I must have at least 10 different ones I use from time to time. Some with cheese, some without. So anyway, I got to thinking of how many different ways there must really be out there that are good that I haven't even tried yet! What is your very best recipe for Potato Soup?

Mine is really simple to make. In large kettle, peel & cut up the potatoes in chunks , 1 medium onion chopped & cook til done. Drain. Put back in same kettle. Add milk or half milk & half water to cover the potatoes. Add 1 can carrots & 2 cans cream of celery soup & stir til well mixed. Heat til hot & serve. Season with salt & pepper to taste.

Mine is pretty much like Minnys except I use canned milk. I think soup is richer, smoother with it rather than regular milk

I don't care for the taste of canned milk. Alot of people use it instead of regular milk though. I forgot to say I added about 4 big tablespoons of butter or margerine to mine too.

Patti, I've made it like this for a long time. I like mine kind of thick but when my mom made it she called it soupy potatoes.. she didn't thicken it up. She just used the milk, onions, celery & butter.

If you are only making a small pan, I would only use 1 can of celery soup in it. For us here, I used a 6 qt pan. You can also use frozen cubed hash browns for the potatoes to make it faster.

I have an OLD recipe from the back of a Potato Bud (instant mashed potatoes) box. I have changed to using real potatoes, but it's not that different. My mil used to make a lot of stuff like instant mashed potatoes and Minute rice, but growing up we never did, scratch only. So it was hard to use boxed stuff at first.
Anyway it had boiling water enough for however many servings, which you added a little chopped oinon, celery, chicken bouillion and then the instant potatoes to the thickness you want. It's ok, .......... IF you're "challenged" lol
I like to use red potatoes cook in chicken stock with 1 carrot (6 cups water), 1 chopped onion. When potatoes are tender enough remove and mash, return to pot add enough milk to get the right thickness you prefer, and evaporated milk or half and half also work. I like to use cream of celery or mushroom soup on occasions too, just depends on my mood. Usually have shredded cheese to garnish. If dh wants Loaded Baked Potato Soup, I add sour cream and use the cheese and crumbled bacon to garnish.
Think most recipes are similar, and it's that extra love added that makes them stand out. @:-)
