Breakfast Casserole
1pkg bulk pork sausage
1 med. onion, chopped
3 c. hash brown potatoes
2 c. shredded monterey/cheddar cheese
1 c. bisquick
2 c. milk
1/4 t. pepper
4 eggs
Cook sausage and onion together; stir in potatoes and 1 1/2 c. cheese. Stir in bisquick, milk, pepper and eggs; blend well. Pour into 13x9 baking pan/dish. Cook in a 400 degree oven, 40-45 min. When knife/toothpick inserted in center comes out clean, sprinkle last 1/2 c. of cheese on top and bake for an additional 1-2 min. Cool 5 min and serve.
