Cinnamon Yeast Bread/90 Minute Bread

Cinnamon Yeast Bread/90 Minute Bread (makes 4 loaves)
Dissolve together in a small, shallow bowl:
1 C. very warm water 3 T. yeast
Set aside. In a large bowl, combine:
3 C. very warm water
4 t. salt
3 T. honey
4 T. olive or canola oil
Combine the two mixtures. Stir in thoroughly:
4 C. whole wheat flour
5 C. white flour
Add extra flour a little at a time, just enough to for a soft dough. Knead by pounding dough vigorously with a large spoon for 1 minute. (This is not a mistake.) Form four mounds of dough and let stand. One at a time, roll out each mound with a rolling pin on a floured surface to form a rectangle. Sprinkle on each rectangle:
1 T. brown sugar
½ t. cinnamon
Start at one of the long ends of each rectangle and roll up tightly to form compact loaves. Tuck loose ends under, seam sides down. Place in four bread pans coated with Pam. Let rise, covered, in a warm place for 30 minutes. Bake in preheated 350 oven for 30-40 minutes.
[The next time I make this I will put raisins in with the brown sugar and cinnamon. I LOVE cinnamon raisin bread!]
