| Ginger Iced Tea 1 - 3" long piece of ginger, peeled and coarsely grated 4 cup water 1 cup sugar 1/4 cup loose tea leaves, (English breakfast or Earl Gray) 6 cups water Put ginger in a non aluminum bowl. Pour in the 4 cups water, cover, and let sit for 48 hours. Line a sieve with cheesecloth and place over the saucepan. Strain the ginger water through the sieve and add 1 cup sugar to the saucepan. Bring to a boil over high heat, stirring, then reduce heat to medium and simmer 10 minutes undisturbed. Remove from heat. Stir in the loose tead and cover. Let steep 5 minutes. Strain the tea into a large heatproof pitcher and pour in 6 cups water. Stir well, cover and let sit in refrigerator till well chilled. Pour over cracked ice and serve. Serves 8
