Bite Size Zucchini Muffins

Serve these muffins as a quick, on-the-go breakfast, a lunchbox treat or an after school snack. There’s so much flavor packed into these little snacks that your kids won’t even know that they are eating something with a vegetable in them!

What You Need

3 cups all-purpose flour 1 tsp. baking powder 1 tsp. baking soda 1 1/2 tsp. cinnamon 2 cups sugar 4 eggs 1 tsp. vanilla 1 cup oil 2 cups finely grated zucchini 1/2 cup raisins, chopped into small pieces 1/2 cup chopped pecans or walnuts (optional) 1/2 cup mini chocolate chips (optional)
