Mini Cucumber Sandwiches

February 12th, 2013 posted by Amanda Formaro

These mini open faced cucumber sandwiches have been around for as long as I can remember. From office parties to family gatherings, they are a tasty and refreshing addition to any appetizer tray.

What You Need

1/2 loaf of cocktail rye bread Garden Vegetable flavored cream cheese 1 large cucumber dried or fresh dill

What You Do

Spread each slice of bread with Garden Vegetable cream cheese. Use a vegetable peeler to create stripes on the cucumber by peeling off a layer, skipping a section, then peeling another section and repeating this process until you’ve gone all the way around the cucumber. Slice the cucumber into 1/4″ thick rounds. Place cucumber slices onto the bread, one slice of cucumber per slice of bread. Lightly sprinkle each cucumber sandwich with dill weed, just enough to garnish. Store in an airtight container and keep refrigerated until ready to serve.
