Thumbs up Naughty Way To Roast A Chicken

Layer bottom part of bundt pan with cubed red skinned potatoes and chunked sweet onion. I seasoned with salt & pepper.

Place whole chicken (3-4 lbs) over funnel park of pan, upright with legs downward.

Rub chicken with your favorite seasonings.

Place oven rack low enough to accommodate entire pan.

Preheat oven to 450 degrees. Bake at this temperature 15 minutes.

Reduce heat to 350 degrees and continue for 40-45 minutes.

Relieve chicken of it's dundty-y by carefully lifting it off with tongs.

If vegies not tender put vegies back in oven until done.

DELICIOUS!

Sandy, do you set the bundt pan on a cookie sheet to catch the drippings or is that not a problem?

Yes I do set the bundt pan to catch drippings. There are no drippings as it stays in the bundt pan...but better safe than sorry. I dislike cleaning stoves.
