Rosemary Garlic Chicken

Rosemary garlic chicken
Make by:
Cutting the whole chicken in half along the backbone only and taking out the wishbone.
Opening up and pushing the chicken flat.
Then rub on 2 cloves crushed garlic and
rosemary crushed with a morter and pestle and mixed with a couple of table spoons olive oil.
Laying the chicken flat (using skewers if need be) and rubbing in the garlic/rosemary/oil mix onto the chicken.
Bake in a 400*F/200*C oven till cooked and browned.
Serving with tomato, onion and spinach tossed with dressing and over cooked couscous.

Thank you Bluebird glad you liked it we did. We had it for dinner the other night only with roast vegies and my lot asked to have it again.

We really loved it. I have another chicken in the freezer, I will make it again this weekend!
