Chicken Cacciatore

Makes 6 servings
Prep: 15 minutes
Cook: about 35 minutes

Ingredients1 chicken (3-1/2 to 4 lbs.), cut into 8 pieces1/2 teaspoon salt, divided1/4 teaspoon freshly ground pepper, divided1 tablespoon olive oil1 large onion, diced1/2 cup dry white wine3 garlic cloves, pressed1 bay leaf1/2 teaspoon dried sage 1/4 teaspoon dried rosemary 1 can (14-1/2 oz.) stewed tomatoes1/2 pound mushrooms, thinly sliced1/2 cup chicken broth3 tablespoons tomato paste
Directions1. Season chicken with 1/4 teaspoon salt and 1/8 teaspoon pepper. Heat oil in a large nonstick skillet over medium-high heat. Add chicken and brown well on both sides, about 7 to 10 minutes. Transfer chicken to a bowl and set aside. 2. Tilt pan to remove all but 1 tablespoon fat. Add onion to pan and cook, stirring frequently, 5 to 7 minutes or until softened. Reduce heat to medium. Stir in wine, garlic, bay leaf, sage, and rosemary. Cool 1 minute. Stir in remaining ingredients and salt and pepper. Add chicken and any accumulated juices and simmer, covered, over medium-low heat, 10 minutes. Remove cover and continue to simmer until chicken is cooked through, about 10 minutes more. Remove bay leaf. Makes 6 servings.
