Chicken Pastry

1 (3 to 5 lb.) chicken, boiled, and cut off the bone
Water to cover chicken
Salt and pepper to taste
2-3 cans cream of chicken soup undiluted
Pastry (recipe to follow)

NOTE: You can get the pre-made pastry in the freezer section of your grocers. It is called Annies here.

Boil chicken in large pot with enough water to cover until tender. Add salt and pepper to taste. Bone chicken and put back into broth.


4-5 cups all-purpose flour
1-2 Tbsp. Crisco
warm water

(Dough should not be sticky)

Knead dough till stiff enough to handle. Divide dough into pieces, small enough to roll out. On a well floured pastry sheet, roll very thin, adding flour as needed to prevent sticking. Cut into 1 inch strips. Drop into boiling broth until all the dough is used.

Add more water at this time. You can taste and if needed, add salt and pepper. Add the chicken soup. Turn your heat to low and let this simmer until pastry is done, about 15-20 minutes.

It is so much easier to just purchase the pastry dough, which is what mom did during the last few years. There is no difference in the taste!

I serve this with cornbread and baked sweet potatoes. It is such feel good comfort food meal! Enjoy it.
