I have a spiral cut ham I bought two weeks ago for 97 cents a pound! Going to cook it for tomorrow and make a potato casserole and a green bean/corn casserole to go with it!


Green Bean and Corn Casserole Serves 6-8
1(14.5 oz) can French style green beans, drained
1 (15 oz) can corn, drained
1 cup shredded sharp cheddar cheese
1/2 onion, chopped
1 cup sour cream
1 (8 oz) can sliced water chestnuts, drained
1 (10.75 oz) can cream of celery soup
1/3 cup butter, melted
1 sleeve buttery crackers, crushed

Spread green beans in bottom of ungreased 13 x 9" pan and layer corn on top. In a separate bowl mix cheese, onion,sour cream, water chestnuts and celery soup together. Spread over vegetables. COmbine butter and crackers and sprinkle on top. Bake at 400 degrees for 40 minutes or till golden.

Crunchy Onion Potato Bake 8 servings

2 cups water
3/4 cup milk
1 pouch (4.7 oz) Betty crocker homestyle creamy butter mashed potatoes
1 (11 oz) can whole kernel corn, drained
1/2 cup shredded cheddar cheese
3/4 cup French Fried onions 9 (from a 2.8 oz can)

Heat oven to 350 degrees. Spray a 1 1/2 qt. glass dish with nonstick spray. In a 2 qt. saucepan, heat milk, water, and butte to boiling. Stir in potatoes just till moistened and let stand 1 minute. Stir with fork till smooth. Stir in corn. Spoon half potato mixture into prepared dish. Sprinkle with half each of cheese and onions. Top with remaining potatoes and sprinkle with remaining cheese and onions. Bake 10 to 15 minutes or till cheese is melted and onions are golden.

Last night we had venison ring sausage that DH's brother gave us with white beans and greens. Today, I'm doing boneless short ribs in the slow cooker. There will be either noodles or some kind of tater along with steamed carrots to go with them. Cat, your recipes always sound so good! Hope we are all staying warm! Happy New Year, everyone!!

Roasted chicken in the turbo cooker with papaya, carrots, potatoes


Made a roasted chicken in the turbo cooker pot. Cook it upside down so the breast stays moist. Love how everything cooks in one pot covered. Have enough left for a salad tomorrow for lunch.

I ended up getting off of work early yesterday so I made Hot Dogs and Mac and Cheese for dinner............tonight we will eat out.

We have so many leftovers tonight we will be eating out of the refrigerator. Those two new casseroles I posted above were VERY good!
