Tonight we are having what I call
Bruschetta Pasta for 2
Cherry or the like tomatoes (about 200-250g)
1/2 thinly sliced onion
About 1 teaspoon balsamic vinegar
About 1 teaspoon of sugar
Salt, pepper, parsley, basil and oregano (fresh is best) to taste. Chopped
Cooked pasta of your choice.
Cut cherry tomatoes in half and slice your onion.
In a pan pop in about 1 tablespoon of olive oil on med heat.
Add onion until about half cooked (you want it to cook and soften not brown as such)
Pop the tomatoes into the pan for about 5 mins, you want the tomatoes warmed
through but not mushy.
Add the balsamic vinegar first then the sugar. Start off small as you may not need it
all it depends on your tomatoes. You can add more but not take it away. Taste it!
Throw the cooked pasta into the pan then add your seasonings and herbs to taste. Serve immediately.
You can toss in some cooked chicken to make it more of a meal.
This is also great on toasted sour dough bread, I love when the tomato juices soak
into the toast.

Last night my bro and sil came over.
I made a really god cheese dip for nachos it was so simple and tasty. I made a lasgne casserole with shell pasta that came out really good. You cook the pasta and mix the cheeses in with pasta and put it in the dish and put meatsauce on top and then a littlemore sauce over that and bake and then top with cheese and bake again. It was good!!!!
I have jar of an indian butter chicken sauce I am going to throw int he instant pot with some chicken breasts, potatoes and carrots. We will see how it comes out.

We are having cheddar brats, fried potatoes, and pan roasted broccoli today....also sliced cukes and tomatoes.

Lauri, Happy Belated Anniversary!

Made a pork roast for the first time in the Nu wave air fryer. Was surprised how fast it cooked even with the bone in it. Made a gravy from the juices in the bottom pan that accumulated. Cooked roasted peppers & potatoes and sweet potatoes in the microwave too. Have enough left over for another meal.
