Heated ham steaks in the air fryer to bring out the flavor for a few minutes.
They were partially frozen so they didn't dry out from the heat. Also made baked beans in tomato sauce & kale. They are real good for a fast meal.

Wednesday night was

Baked Taco Pie

1 lb. extra-lean ground beef
1 onion, chopped
1 Tbsp. chili powder
1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (10 oz.) frozen corn, thawed, drained
6 whole wheat tortillas (6 inch)
1 cup 2% Milk Finely Shredded Four Cheese, divided
1/4 cup Reduced Fat or Light Sour Cream

Heat oven to 375F.
Brown meat with onions and chili powder in large skillet on medium-high heat. Add tomatoes and corn; cook 5 min. or until heated through, stirring occasionally.
Spoon 1 cup meat mixture into 2-qt. round casserole; cover with 3 tortillas, overlapping if necessary to fit in dish. Top with 2 cups of the remaining meat mixture and 1/2 cup cheese. Cover with remaining tortillas and remaining meat mixture; cover.
Bake 25 to 30 min. or until heated through. Top with remaining cheese; bake, uncovered, 5 min. or until melted. Cut into wedges. Serve topped with sour cream.

Going to do ham and egg sandwiches tonight. Had printer problems and been online with geek squad for awhile so going to need to be a quick supper!

Thanks, Sueanne....good to know. I thought the virgin unrefined oil might make food taste too much like coconut.

Salmon patties tonight, with baked potatoes and green salad.

Mrs. Paul frozen fish fillets in the nu wave air fryer



Cooked the battered fish fillets in the nu wave air fryer with the extra rack to make the ten pieces. Was able to cook !0 at the same time in only a few minutes without using any oil making them healthier to eat. Made some french fries in the microwave first then browned them in the air fryer. Heated the rest of the kale from the other night. The Nu Wave Air fryer has helped make our meals more healthier and quicker to prepare.
