Chicken legs in the turbo cooker with potato, onion, yellow & green zucchini


Always enjoy a plain boiled chicken leg cooked with the veggies. Added enough water to make a little soup to pour over it. It comes out so tender it just falls apart as you cut it. Any leftover potatoes will make potato salad & a salad with the leftover chicken for lunch.

Just not sure when we will be able to get to some normal cooking around here! Ever since one of my BIL's passed on May 27 it has been a real whirlwind around here. Family fought over what was to be done with his remains and how, he never would discuss it so all remaining 6 siblings agreed over the phone on what was to be done and at the funeral home one decided to cause problems. Long story short, BIL was finally brought to rest two weeks after his death and now DH and I have to sell the house in Louisville. Since that is an hour away that remains a difficult thing too. Finally starting to get there. At least this will be the last that we have to take control over because since DH's change in life almost 25 years ago we don't agree to taking control over any of that any longer. DH is the one on the papers to do it all, but since he has dementia now I have to handle most of it and just have him sign........

Cat lover, Sorry to hear that you are going through so much and hope things get settled with your BIL's house soon.

Well, I finally got motivated to cook some cornbread yesterday morning before it got too hot, so last night we had that, plus lemon chicken breasts cooked in the crockpot and a green salad. Tonight will be leftovers.
