I think tonight will be planned leftovers of b/s baked chicken thighs, mashed taters and gravy for DH and some veggies. Unless I decide to go with salmon patties.....decisions, decisions....

Today is my dh's B-day. He wanted plain meatloaf and "2 veggies NOT potatoes". He wants to start his diet cuz he really enjoyed the holidays. LOL
Anyway we're having broccoli and cauliflower with the meatloaf. Dessert is going to be sugar free pudding.
He just doesn't get I cook diabetic approved meals which are low-carb, high fiber anyway, and it's the amount of the serving that counts. LOL men!

Made a mixture of turkey & beef chopped meat mixed with zucchini, peppers, onion, mushrooms & papaya. Even add sliced thin lettuce to the mix. Always comes out delicious in the turbo cooker pan.
