Worked the polls for a run-off election Thursday! 6 a.m. to 7:40 p.m. long and boring since few people bothered to show up.
When I got home my dh had pizza for me, so thoughtful!! Since we didn't have leftovers last night, that's what we're having tonight!
Everyone liked the Mexican Chicken Crockpot I made for the polls potluck. Our group potlucks every time so makes it nice.

Mexican Crockpot chicken

1 can black beans RINSED and drained
1 can of corn drained or 1 pkg. frozen corn
2 cups good salsa divided
4 chicken breast (one per person)
8 oz. brick of cream cheese
Cooked rice or pasta for serving

Layer in a crockpot or slow cooker as follows:
Black beans
corn
1 cup salsa
chicken breast
salsa
cook till chicken is tender and done (aprox. 4 hours on high or 6-8 hours on low). Remove chicken and shred using 2 forks. Replace chicken and add brick of cream cheese, cover. Let cream cheese soften and then stir until incorporated in "stew". Serve as a stew or over pasta or rice. Serves 4-6 people. NOTE: Using pasta or rice will stretch your servings (unless teen boys LOL) You can use boneless thighs but cook time is longer and smaller servings. I piece of chicken per- serving.

Last night I made corned beef fritters, I love them so alwaya make them after cooking up a corned beef.

Tonight, saturday we are having take away pizza that ds1 is bringing over and it's games night

My pizza crust came out so good last night. I was very happy with it.
Hubby and I are going out tonight.....
