Dinner tonight is Ham and Butterbeans over Rice.............my Daddy always said the only reason to make a baked ham is for the ham and butterbeans later...........LOL Lucky for me, my Daddy will be having dinner with us tonight...........

Tonight, I made sausage and stew. I got the recipe from Rachel Ray. I made dinner rolls to go with the stew. I omitted the nutmeg and allspice.

She calls it sausage and butternut skillet supper.

2 tablespoons olive oil 2 pounds good-quality fresh Italian sweet sausage, casings removed
A fat handful sage
2 tablespoons finely chopped
2 tablespoons coarsely chopped
1 teaspoon fennel seed
1/4 teaspoon ground cloves or ground allspice
Coarsely ground black pepper
1 1/2 pounds butternut, cheese or red kuri squash, peeled, seeded and cut into 1-inch cubes
1 large onion
Chopped 4 cloves garlic
sliced 1 small fresh Fresno or red jalapeño chile pepper
Finely chopped or 1 teaspoon crushed red pepper
1/4 teaspoon freshly grated nutmeg
Salt

Dinner tonight was homemade mac n cheese and broccoli (a nice change after 3 days of turkey & leftovers)

Made Swai fish fillets for dinner with homemade eggplant in the microwave. Everyone enjoyed it cooked thick slices with breadcrumbs, tomato sauce and cheese in a corning ware dish covered. Also made sweet potatoes. Have a little eggplant left for tomorrow for lunch.

Dinner tonight will be spaghetti with meat sauce, vegetable I find first, and a salad. Left overs IF they don't like spaghetti!

Making what my dh calls sugar bombs

Rolo candies (chocolate covered caramel)
mini pretzels
Almonds or pecans whole

Place waxed paper on a baking sheet. Arrange mini pretzels and top with a Rolo. Place in a 350' oven for 2-3 minutes till Rolo is soft. Remove and place a nut on top pushing slightly. Cool completely and store in an air-tight container (for all the good it does). IF you have any left, that is. Have used Hershey Kisses and the mini bite-size candy bars, but the Rolo is the fave.
