can of glory brand seasoned greens with sauteed onion and celery and ham over red rice with Swiss cheese on top, slipped under the broiler to melt the cheese

Had Boneless pork chops,
potatoes cup up and Sauerkraut cooked in crockpot.
The taters take on bit of S-kraut flavor. chops are very
tender.

Location: I live in the foothills of Maine and near a major river. The area is quiet but we can be in a large city that has everything that you would want to visit. WE're two hours from Old Orchard Beach and it is so beautiful

Sunday night we had steaks on the grill, german potato salad, and fresh green beans


Tonight making stove Top from scratch mac and cheese, steamed broccoli, tossed salad and apple crisp for dessert

Tuesday night we had Meatball and Spaghetti Casserole with lettuce wedges and sliced tomatoes.


MEATBALLS

1 lb lean ground beef
1/3 cup Italian bread crumbs
1 tbsp milk
1/2 tsp kosher salt
1 tsp Worcestershire sauce
1 tsp black coarse ground pepper
1/4 cup onion, chopped
2 tbsp dried parsley flakes
1 egg

**********************

12 oz spaghetti
1 tbsp olive oil
2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 large egg, slightly beaten
2 tbsp dried parsley flakes
Coarse ground black pepper to taste
28 oz. pasta sauce sauce of your choice

Grease a 13 x 9" pan and set aside. Preheat oven to 400 degrees. Combine all meatball ingredients and form into 1" balls. Place on a rimmed edge jelly roll pan and bake 18 to 20 minutes. Remove from oven and reduce heat to 350 degrees.
Boil the pasta until just al dente. Drain and toss with olive oil.
Stir together egg, parsley, pepper, 1/2 cup mozzarella cheese, 1/4 cup parmesan cheese & pepper to taste. Toss with the pasta and place in prepared dish. Top with meatballs and pasta sauce. Cover with foil and bake 35 minutes. Remove foil and top with remaining cheeses and continue to bake till cheese is melted.

Last night we had baked chicken tenders, mashed taters and baked broccoli. Searching for something different tonight.
