Our dinner tonight is,

Apricot chicken
2 double chicken breasts skin off (I also use drumsticks)
450gram can of apricot nectar
1 sachet french onion soup (mine is maggi)
1/2 thinly sliced onion
A little olive oil
Chopped parsley
4-5 thinly sliced apricots (optional)
Mix french onion soup with the apricot nectar in a jug, set aside.
Chop chicken into chunks or strips as long as they are evenly chopped.
Brown chicken and onion in the olive oil.
Turn down pot or pan heat and add the nectar and chopped apricots to the chicken pan.
Put lid on the pot or pan and simmer on a low heat for approx 30 mins or until chicken is tender and apricots are soft.
Serve over rice and whole green beans on the side, sprinkle on chopped parsley. (or veg of your choosing).

Note, if you find the sauce is getting too thick and the chicken is not cooked add a little apple juice or water.

We ate really early last night in case power went out with this storm we are in the middle of...so far we stillh ave power. So we ate , pork cutlets dredged in panko bread crumbs and cooked in a few tablespoons of olive oil, baked sweet potatoes and steamed broccoli.

broccoli nacho mac and cheese
baked beans
sliced peaches

Used leftovers to recreate: spinach noodles, nacho cheese sauce, steamed broccoli, 2 hard boiled eggs...chopped up noodles, broccoli, eggs and mixed with cheese sauce, sprayed a 9" pan and poured it in, baked at 350 35 minutes, broccoli nacho mac and cheese..baked beans and peaches I canned last summer.

Thanks Cau. Buck loves pasties. When he goes to upper MI to fish, he always brings some home with him. I've been trying to find an easy recipe. I thought the grands would save a lot of work. I'm going to make these.
