Tonight we had beef stroganoff, corn and crescent rolls.
Cau, I don't mind making biscuits, I also make homemade rolls most of the time as well as bread. I just love to cook, especially baking.

Goulash
2 pounds beef top round steak, cut into 1-inch cubes
1 cup chopped onion
2 tablespoons all-purpose flour
1-1/2 teaspoons paprika
1 teaspoon garlic salt
1/2 teaspoon pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
1 Bay Leaf
1 cup (8 ounces) sour cream--if you want it
Hot cooked egg noodles
Place beef and onion in a 3-qt. slow cooker. Combine the flour, paprika, garlic salt and pepper; sprinkle over beef and stir to coat. Stir in tomatoes; add bay leaf. Cover and cook on low for 8-10 hours or until meat is tender. I put mine in the crockpot.
Discard bay leaf. Just before serving, stir in sour cream; heat through. Serve with noodles.Makes6-8 servings.

Sunday night dinner
Eggplant Parmesan
3 eggs, beaten
2-1/2 cups bread crumbs
3 medium eggplants, cut into 1/4-inch slices
2 jars (4-1/2 ounces each) sliced mushrooms, drained
1/2 tsp dried basil
1/8 teaspoon dried oregano
2 cups (8 ounces) shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese
1 jar (28 ounces) spaghetti sauce
Place eggs and bread crumbs in separate shallow bowls. Dip eggplant in eggs, then coat in crumbs. Place on baking sheets coated with cooking spray. Bake at 350° for 15-20 minutes or until tender and golden brown, turning once.
In a small bowl, combine the mushrooms, basil and oregano. In another small bowl, combine mozzarella and Parmesan cheeses.
Spread 1/2 cup sauce into a 13-in. x 9-in. baking dish coated with cooking spray. Layer with a third of the mushroom mixture, eggplant, 3/4 cup sauce and a third of the cheese mixture. Repeat layers twice.
Bake, uncovered, at 350° for 25-30 minutes or until heated through and cheese is melted.Makes 8 servings.

I know the feeling, bensmom! I have boneless chicken defrosting too and no clue what to make. Oh well, we will have chicken and something.LOL

Lauri that is so funny. Eggplant parm isn't something alot of people make. I get the egg plants for free. Dh really likes this meal.
