What's For Dinner October 2010
:pumpkinsgCooler weather has finally started around where I live and lots of other areas. That gets me thinking of stews, soups, and as soon as we have some rain and are over the fire ban; firepit cooking!

Dh is coming home tonight and we are going to Lenards's Barbeque!!
Made home made chicken soup for dd #1 and dgs #2 (age 6) and the kid loved it.
Quick Chicken and Mushroom Soup

4 cups water
4 cloves garlic (peel, slice)
8 fresh mushrooms sliced
1 small onion diced
8 baby carrots sliced
1 to 2 cans chicken with broth (may sub 2 chicken breast diced)
1 Thelma (Jewish bouillion) veggie bouillion cube
2 Thelma chicken bouillion cubes
1 can cream of chicken soup
1/4 cup tiny star or alphabet pasta

The Thelma bouillion cubes are in the Jewish section of your grocery store. They are bigger than a regular cube and has less sodium. I crush mine before adding. They are soft and easy to crush, and do have a better flavor than regular bouillion.

Start with the water add in order listed, except pasta which is added 5 to 10 minutes before serving. Bring to a simmer. Simmer 20 or 30 minutes or carrots are tender but not mushy, add pasta, stirring occasionally. Taste, season with salt if necessary (but probably not) and pepper serve.

I have couple Telma Veggie cubes left never saw the Chicken ones or beef. Did not know they had less salt great glad to know it.

Leftover soup tonite tomorrow may be Bison burgers

Wow 2 days into October and the countdown to christmas and more food food food!

Last night was a sort of asian noodle broth with veg and steak slices over top.

Tonight is saturday so I will see what everyone wants, might have take away not had that for a while.
