Panfried parmesan crumbed chicken breasts with chips and salad.
My parmesan crumbs = 50% bread crumbs, 50% wholemeal plain flour, finely grated parmesan cheese to taste and cracked pepper to taste, dired parsley if desired.
Mix well. Flour, egg and crumb as per usual then pan fry.

Last night we had twice-baked potatoes stuffed with broccoli and green onions, Caesar salad and fresh pineapple.

Tonight we're having grilled hot dogs, baked beans and cucumber/tomato salad. I wanted something easy since I have to make a breakfast casserole tonight to take to work tomorrow. We're having a Boss' Day breakfast.
