What's for Dinner? February 2010

Tonight I'm having Irish Brown Bread and Chicken & Stuffing Casserole. A friend of ours made us this casserole right after my surgery and it was SO good; she was kind enough to share the recipe!

IRISH BROWN BREAD
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 tablespoons cold butter or margarine
2 cups whole-wheat flour
1/4 cup regular or quick-cooking rolled oats
1 1/2 cups plain nonfat yogurt (OR use powdered buttermilk + water to make 1 1/2 cups)
Milk
1. In a bowl, mix all-purpose flour, sugar, baking powder, baking soda, and salt. With a pastry blender or 2 knives, cut in butter until mixture forms fine crumbs. Stir in whole-wheat flour and oats.
2. Add yogurt; stir gently. If mixture is too dry to hold together, stir in milk, 1 teaspoon at a time, just until dough holds together; it should not be sticky.
3. Turn dough onto a lightly floured board and knead gently 5 times to make a ball. Set on a lightly greased baking sheet. Pat into a 7-inch circle. With a floured knife, cut a large X on top of loaf.
4. Bake in a 375° oven until well browned, about 40 minutes. Cool on a rack. Serve warm or cool.


CHICKEN & STUFFING CASSEROLE


1 lb. chicken tenders
1 can cream of chicken soup
1/2 cup water
1 box Stove Top stuffing mix
2 to 3 tbl butter
2 cups mixed vegetables
1/2 cup shredded Cheddar cheese

Mix soup and water with a whisk in the bottom of a 9X13 casserole dish. Top with the stuffing mix and vegetables. Stir a bit with a fork to moisten. Dot with butter. Place chicken pieces on top of everything. Cover with foil. Bake at 325 for 55 minutes. Remove foil and sprinkle cheese on top. Bake uncovered just until the cheese melts.

I made chili from left over spaghetti sauce for some

baked chicken breasts with rice/gravy and corn for others

Last night was whole roasted chicken, stuffing, fresh broccoli and gravy.

Tonight is deer steaks, noodles and a vegetable. Took inventory of my freezer over the weekend. Need to use up what is in it. We have a 1/2 of steer coming sometime in March. Need room in the freezer.

Yesterday I laughed when the inlaws came for dinner saying "welcome to Cracker Barrel" as I had made beans, turnup greens and cornbread for dinner. I did add some ham into the beans though.

Tonight I'm going to marinate chicken in red pepper salad dressing with rice and a veggie on the side.
