What's for Dinner? January 2010

Tonight's dinner was strip steaks, salt potatoes, salad and corn.

We made Cheer Wine punch to drink tonight.

Cheer Wine is a soda made here in NC. It is cherry flavored- to me it is similar to cherry cough medicine! BLAH!! to me as a northerner who didn't grow up drinking it and I hate the cough medicine flavor.

BUT.....

The Cheer Wine punch is really good! My dd's teacher made it for their class Christmas party and we decided to make it for tonight.

The recipe is simple:

To a large mold or lg. bowl add:

1-2 liter bottle of Cheer Wine (not diet) + 1 lg can (46 oz) of pineapple juice. Freeze.

One hour before serving, pop the frozen mix out of the mold and put in a punch bowl. Pour 1 - 2 liter bottle of Ginger Ale over to melt. Needs no ice. Stir to mix.

I divided this mixture into 2 gallon jugs. Popped them in the freezer. To drink it for dinner, it wasn't frozen, just good and cold. I poor a half glass of the punch mix into each glass and then topped off each glass with Ginger Ale. I'll follow the directions for the frozen mix for later tonight.

You can also add vodka to this mixture for adults.

We had left over chili, hot dogs ,and potato salad for supper tonight. No specialities here tonight, too much leftover from yesterday! lol
I think I will have a glass of coconut flavored rum with a little pineapple juice before I go to sleep! Happy New Year!

Tonight it's bean soup with homemade potato bread. I'm going to make an apple crisp for dessert since we have some apples that have seen better days.

Roberta we are having almost the same thing at our house tonight.

I am making porkchops, saurekraut, mashed potatoes, gravy and steamed broccoli.

Hau'oli Makahiki Hou everyone! Or as they say in Hawaiian Happy New Year! BF is making prime rib for us lucky folks tonight. Not sure what else, but for dessert : individual turtle (pecan and caramel) cheesecakes. Yay!

Still have leftovers ,but need something different tonight so making a casserole that is quick and easy, Almond Chicken. DH is having potato bread wth his and we are both having coleslaw.

Almond Chicken Casserole

3 cups cooked chicken
1 cup mayonnaise
1 cup slivered almonds
1 cup finely shredded swiss cheese
1/4 cup onion, chopped
2 tbsp pimiento, chopped
1/2 tsp pepper
Combine chicken, mayonnasie, 1/3 cup almonds, cheese, onion, pimento and pepper. Mix and put into a 11 x 7" dish that has been sprayed with nonstick cooking spray. Sprinkle with remaining almonds. Bake at 350 degrees for 25 minutes. Serves 4 to 6

tonight we're having black-eyed peas w/ham, collards and cornbread, although dh won't eat any, except the cornbread. leftovers for work tomorrow-I hope.
