Well, for once, I already know what's for dinner today, since it is DS's birthday. We will have steaks on the grill, twice baked potatoes and caesar salad (the simple kind). He didn't want a birthday cake, so I suggested chocolate chunk cookies, and he agreed that that sounded just right, so I made cookies last night.

Happy Birthday to Jean and Lizzie-boo and Connie's DS!

My DS birthday is on Sunday, but we're having a party/cook-out on Saturday night. He requested cherry cobbler instead of cake.

Dinner tonight will be Chicken Cordon Bleu (sp?), fried potatoes and fresh corn on the cob.

I'm making a pork roast....can't decide whether to do a balsamic pork roast with potatoes OR an apple-cinnamon pork roast....decisions, decisions!

My husband shakes his head when I ask him in the morning what he would like for dinner. The kids ask me all day long, "what's for dinner." When I stumbled across this thread, I had to chuckle!

Dinner tonight will be on the grill. I like to grill corn on the cob, which is coming in fresh around here, and will probably throw some fish on the grill too. In the house, I will make potato pancakes. I finally found a great recipe (below). For dessert, I am hungry for brownies, chocolate of course, so I will bake a pan of those this afternoon.

Potato Pancakes
4 lg potatoes
2 eggs, slightly beaten
1/2 c flour
1/2 c diced onion
1 t salt
1/8 t pepper
oil for frying
syrup or applesauce

Peel and shred potatoes. Combine the poratoes, eggs, flour, onion, salt and pepper. Heat 1/4 inch of oil over medium heat. Drop batter by 1/4 cupfuls into oil, about 3 inches apart. Press lightly to flatten. Fry until golden brown, about 4 minutes on each side. Drain on paper towels. Serve with maple syrup or applesauce.

We have another cloudy and rainy day underway.

Dinner tonight is fried chicken, potato salad and whatever else I can throw together. Cake for dessert.

Welcome, Shelly! We all enjoy hearing ideas from each other. Many times, I get my inspiration for dinners from this thread, if only because it reminds me of something I haven't made in a while.
