LJsmom, I hope you are feeling better. Soup and homemade bread does sound WONDERFUL!

Debknechtel, I was wondering. Are you saying that you freeze FRESH, RAW eggs? Do they freeze well? I was thinking that I will have to make eggs benedict in the morning so that I won't have to waste the egg yolks from making the raviolis tonight and being able to freeze them will let me off the hook.

Well, TROY came out today so I plan on watching it with dh. (I've been excited about it coming out since I saw it in Mexico this summer!) Thank goodness that my kitchen is in the same room as my family room because I am craving raviolis! So, I'm having spinach and cheese raviolis in sugo sauce. Hubby won't like it that there isn't any red meat, but I think he'll live!

We are having baked pork steaks, fresh green beans and salad.

I need to take some time and list what I have in my freezer to figure out what to make for dinner for the rest of the week.

Hi Everyone....

I prepared a crockpot meal today. Cooking in the crockpot is one of my favorite ways to cook.

Today I made a pot roast and then some Coconut Ginger Rice (from a box) to go with it since it got very saucy. The recipe is very easy so I'll go ahead and include it. It was well received at dinnertime...even a neighbor stopped by after we were done. I wish there had been some leftovers for him.

Pot Roast
2 pounds boneless beef chuck, cut into large chunks
1 can (14.5 ounces) stewed tomatoes, undrained
1 packet (1.5 ounces) beef stew seasoning

Combine beef, tomatoes, and seasoning in a 4-quart slow cooker.

Cook covered, on LOW for 8 hours (or HIGH for 4 hours).

Patti,
My jumbalaya isn't the hard core hot stuff you may be thinking of. I'll dig out the recipe and post it-really good and easy to make! Dh came home with a taste for my hobo skillet so we had that instead.

Sliced potatoes fried up in sm. amt of butter until crispy
sliced onions
1" sliced smoked sausage
scrambled eggs
melt cheese on top.

Fry potatoes;
when they are almost done in another pan saute onions and sausage together. Mix with potatoes. Scramble eggs then add last. Mix together then add cheese on top. Extra good in a cast iron skillet! All amounts are to taste.

Well, after having the Bad Dinner Fairy visit our house for two days in a row, I finally gave in and just made spaghetti with salad & garlic bread for supper tonight.

Jambalaya is sounding good! Maybe I'll make that for supper tomorrow night.

Whenever we can't decide what to eat, it seems we rely on white sauce. So Dh cooked (brown and serve) bisquits that we bought for Christmas dinner and forgot to cook, and made gravy. He opened a can of salmon too. He told me he didn't know how to make white sauce, so I told him what all went in it. When he said dinner was ready, I looked at his sauce and decided that he is making white sauce anytime we have it. It was so smooth and didn't look like glue. Mine always does and is never completely smooth like his. It shouldn't suprise me. He is a much better cook than me. His muffins are light and fluffy and come to a beautiful peak.
There are times when I remember why I like him ...lol.

A friend of mine gave me this recipe for sandwiches, she brings them as her dish-to-pass at parties, but they're so good I make them for dinner on occasion.

This is the recipe she gave me, it makes enough to feed an army - but I cut it way down when I make them.

Whats for dinner-Jan

Thanks LJsMom, will be looking for it. We had waffles tonite I asked Adam if I could find the waffle maker would he want them and he said yes , so I did and made enough so he could have them for breakfast in the moring before he leaves for school. Aren't I a sweet Granny
