What's for Dinner? - July


July already! Where is the summer going? Only a little over a month and my two DS will start another school year!

Anyone have any special dinner/picnic plans for Independence Day???

I copied that congeal salad recipe; if I use fat free cool whip and fat free cottage cheese that will be a good start to a LOW fat supper for hubby! Thanks for posting that Sophie!

I think he will have fish baked; just not sure yet what fish. The rest I'm not really sure yet. I have to get myself back into that fat free cooking mode! Will probably start searching through old recipe files and see what I can start coming up with. It will eventually be no trouble, but just getting started again is!

I just had my in-laws here, so we had grilled salmon, Mexican rice, steamed broccoli and a salad one night...

I sauteed tilapia with some Asian spices in a pan, had white rice, mixed Asian vegetable salad another night...

For dessert, I made a blueberry-lemon curd tart...

And "snowballs" (chocolate ice cream balls rolled in coconut)...

Tonight, I am going to make steak!

Along with the baked fish we are having baked potaotes, green beans and Sophie's congealed salad. I fixed a big bowl of sliced bananas with chunked up apples with the peel in orange juice. That should give hubby something different and healthy to munch on and me too!

Have to go and check on a neighbor that just had surgery before I actually go and get started on supper so better get moving!
