Sri Wasano's Indonesian Rice Salad

2 cups brown rice
3 cups water

1 stalk celery -- finely minced

8 ounces waterchestnut, canned -- sliced
1/2 pound mung bean sprouts
1/2 cup currants
1 cup peanuts
2 tablespoons sesame seeds
snow pea pods, fresh, whole

1.) Place in a saucepan. Bring to a boil, lower heat, cover and simmer until tender (35 to 45 minutes).
a. 2 cups brown rice
b. 3 cups water

2.) While the rice cooks, combine in a large bowl.
a. 1/3 cup peanut oil
b. 3 tablespoons Chinese sesame oil
c. ½ cup orange juice
d. 1 to 2 medium garlic cloves, minced
e. 1 teaspoon salt
f. 2 tablespoons soy sauce
g. ½ teaspoon crushed red pepper
h. 2 tablespoons rice vinegar
i. 1 cup chopped pineapple

3.) Add hot rice directly to the bowlful of dressing. Mix well. When it has cooled to room temperature, cover tightly and refrigerate until cold. Shortly before serving, stir in:
a. 3 scallions, finely minced
b. 1 stalk of celery, finely minced
c. 1 medium sized red pepper, thinly sliced
d. 1 8-oz. Can water chestnuts, drained and sliced
e. ½ lb. Mung bean sprouts
f. ½ cup packed currants
g. 1 cup coarsely chopped peanuts and / or cashews
h. 2 tablespoons sesame seeds
i. Handful of fresh snow peas
