Peas Paneer

An Indian vegearian main dish
1 - 16 oz. bag of frozen green peas
3 medium tomatoes
1/2 pound of very firm tofu (original recipe called for paneer cheese which I can't find)
3 tbsp olive oil
1/2 tsp cumin
2 bay leaves
1 tsp cinnamon
1 tbsp ginger, chopped
1 tbsp coriander powder
1/2 tsp turmeric
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp salt
1/2 tsp sugar
1 tbsp cornstarch

Cube the very firm tofu into 1/2" pieces and fry them. Fry till the tofu becomes a light golden color. Drain on a paper towel.Mix cornstarch with three tbsp of water and set aside.Blend tomatoes and ginger to make a paste.Heat the oil in a saucepan. Add the cumin seeds, bay leaves and cinnamon and stir a few seconds.Add the tomato paste, coriander, turmeric, chili powder and paprika. Cook till the mixture reduces to half.Add the green peas and 1/4 cup of water and cook. When the peas are tender, add the salt and tofu.To thicken the gravy add corn starch mix. Cover the pan and let it cook for 3 to 4 minutes. Serve with rice. Makes 2 servings as a main dish.
