Ravioli Primavera

4 cups frozen cheese ravioli
1 pkg (16 oz.) frozen Italian vegetables, thawed
1/4 cup olive oil
2 garlic cloves, minced
1/4 cup chicken or vegetable broth
2 Tbsp. minced fresh parsley
1/4 tsp. salt
1/4 tsp. pepper
Prepare ravioli according to package directions. Meanwhile, in a large skillet, saute vegetables in oil for 3 minutes or until tender. Add garlic saute for 1 minute longer or until garlic is tender.
Stir in broth. Simmer, uncovered, for 2 minutes. Stir in the parsley, salt and pepper; cook 2 minutes longer or until vegetables are tender. DRain pasta. Add to vegetables mixture; toss to coat.
Serves 4
* I got this recipe from a little magazine from the store called Taste Of Home Dinner on a Dime.
Don't go back for less just because you're too impatient to wait for the best.

I doubled this recipe....Ravioli Primavera is a great meal to make on a busy day. Very easy to make. I used the chicken broth and more garlic cloves because my family loves garlic. I served this meal with Italian bread and it was enjoyed by all.
