California Black Bean Burgers
1 Can (15 oz) black beans with cumin & chili spices, undrained (I used a can of seasoned black beans)
1 can (4.5 oz) chopped green chilis, undrained
1C unseasoned dry bread crumbs
1 egg, beaten
1/4C yellow corn meal
2T vegetable oil
1T mayonnaise or salad dressing
1 1/4 C shredded lettuce
2T chunky style salsa
5 toasted, split burger buns
In food processor or blender, place beans and process until slightly mashed. Remove from processor and place in a bowl. Stir in chilis, bread crumbs and egg. Shape mixture into 5 patties about 1/2 inch thick. Coat each patty with cornmeal. In skillet, heat oil over med. heat. Add pattied and cook 10-15 minutes turning once, until crips and throughly cooked on both sides.
Spread bottom halves of buns with mayonaise. Top with lettuce, patties and salsa. Cover with top halves of buns.
