Zucchini Potato Pancake

Zucchini Potato Pancake

2 small Zucchini, shredded
1 Potato Shredded
!/4 cup chopped red onion
2 eggs beaten
1/2 cup white whole wheat flour
3 Tbs italian seasoned breadcrumbs.
1 Tbs olive oil
Most recipes suggest to drain zucchini and potato in a strainer to let water out. I like to leave mine moist without squeezing out the water.
Put potato in cold water after shredding to prevent browning.
Combine all in large bowl. Lightly coat skillet or griddle with nonstick cooking spray. Add one teaspoon of olive oil. Heat over medium heat. Using 1/4 cup of mixture per pancake, drop onto hot skillet, leaving 2 to 3 inches between mounds. Flatten mounds to about 1/2 inch thickness. Cook pancakes till golden turning once halfway through cooking.
