Question Anyone know of a good vegan casserole

Something without eggs or cheese. Maybe just veggies, beans, and rice or something? Thanks

Zucchini rice casserole

I've made this dish for several potlucks at church and everytime it gets gone. Plus during the summer it gets rid of all the extra veggies :-)
cook 1 package of wild rice (I like Uncle Ben's regular wild rice) with the seasoning packet. While the rice is cooking I saute onions, garlic, celery, carrots, peppers(red, green, yellow) mushrooms, whatever veggies you like,. Cut zucchini in half lengthwise, steam it in microwave until soft enough to scoop out the inside (leaving a "boat" shell) Chop the scooped out insides part and add to the vegetable and rice mix. Then spoon the rice and veggie mix back into the zucchini boats. Somtimes I mix a little cheddar cheese into it or sprinkle it on top and then back it until hot, about 25 minutes.
Sorry this is kind of vague, I like to cook so don't really use a recipe. If you need more specifics, let me know and I"ll try to come up with exact amounts and times.

This has been a big hit
one bag of frozen mixed vegetables (cook as directed before
putting into casserole)
mix with one can (or two depending how big of veggie bag you buy) of cream of mushroom, celery (your favorite)
and top with durkee onions rings (lg. can)
bake 350
1/2 hour
I have tried all kinds of frozen mixed vegetables, including some with potatoes and this has never failed
serve with french loaf bread and cottage cheese
and its a full meal
