Spanish Food: Gazpacho!!!

Hi!
Gazpacho is one of my fave foods, and it's really typical. It is basically a cold soup. I hope you enjoy it...

ingredients (for 3 people):

6 or 7 very ripe tomatoes
1 (2 if small) green italian peppers (long and thin)
1 cucumber
1/2 white bread loaf
2 cloves of garlic
1/2 glass of olive oil
3 teaspoons of vinegar
salt

Simply sink the bread, previously cut into pieces, inside a bowl full of cold water, and press until it soaks and then leave it there while you prepare the vegetables.
Clean all the vegetables. Cut the dark part of the tomatos, where the stem is born (dont know the name in Ebglish, sorry) and then chop the tomatos into big chunks. This way, you won't miss all the juices and the seeds. Then peal the cucumber off and take away the seeds of the pepper. Chop it all too. Peal the garlic, and cut them in two, take away the small soft wgite seed inside of it, to prevent it from giving to much flavour.
Then squeeze the bread and put it in the mixer vase, add the vegetables and the oil. You can use any olive oil, but the greener (extra virgin olive oil), the better taste. Prepare a glass full of cold water. Start mixing the ingredients until it becomes a pink-orange paste. Add water to get the consistence you prefer, and mix again so it remains smoot. Now you can add the vinegar and salt until you find it tasty.
Now, some people think it's done, and in fact it is, but i prefer to sieve it, because of the tomato skin that you may find. Do not take away the skin before you do the Gazpacho, because it contains lots of vitamins, and this way, most part of them are in the soup. Sieving only takes the rests out, so you can enjoy a smooth, fresh, spanish salad soup. Hope you like it!!!!
