Zucchini - Spinach Frittata

This recipe came out of our local paper more than 30 years ago. Even the kids that wouldn't eat zucchini liked this. They even ate it cold.

Zucchini - Spinach Frittata
6 eggs
1 Tbls. parsley, chopped
1/2 tsp. salt
1/2 tsp. dried oregano leaves
1/4 tsp. pepper
1/2 tsp. dried basil leaves
Dash of Tabasco
6 Tbls. butter
4 small zucchini, sliced
1/2 cup grated parmesan, Romano, Swiss or Jarlsberg cheese (2 oz.)
1 large onion, sliced
1 clove garlic, crushed
2 cups fresh spinach, chopped

Beat eggs, salt, pepper and Tabasco in a large bowl. In a large skillet, melt 3 Tbls. butter.
Add zucchini, onions, garlic and sauté until soft.
Stir in spinach, parsley, oregano and basil. Sauté 2 minutes until limp.
Add sautéed vegetables to egg mixture.
Add 3 Tbls. more butter to skillet and then add egg/vegetable mixture.
Cook over low heat until eggs are set. Sprinkle cheese over top.
Place under broiler (about 4 inches below heat) until cheese is bubbly.

DeBora - The Zucchini - Spinach Frittata was such fun to make the first time as I went to the farmer's market and got just the right amount of fresh vegetables to make it. It was so good! Even cold!

I love making it now with my fresh garden veggies during the season. Can hardly wait for those veggies to get planted now.

I don't know if we can get fresh spinach here, but I know we can get fresh squash of all kinds ib either my DHs garden or at flea markets. But, we can get fresh spinach at the grocery store. I think that I will make this between semesters when I have space and time to enjoy it.
