Black Beans And Rice Cakes

As posted by catlover in the July 2004 What's for Dinner? thread.


1 cup water
1/2 cup rice
1 15 oz can black beans rinsedand drained
1 cup fresh bread crumbs
1 stalk celery, finely chopped
1/4 cup finely chopped red bell peppers
1/4 cup fat free egg substitute
1/2 tsp black pepper

Preheat oven to 375 degrees. Coat a baking sheet with non stick spray. In a medium saucepan, combine water, and rice. Bring to a boil; reduce heat to low, cover and cook 20 minutes or until water is absorbed. Remove from heat and stir in beans, bread crumbs, celery, red bell peppers, egg substitute, and pepper. Coat a 1/2 cup measuring cup with non stick spray and put 1/4 of the rice mix firmly into it and then turn out onto the baking sheet. Press to flatten to 3/4" thick; repeat with remaining mixture to form 4 cakes. Bake 20 minutes or till heated. Makes 4 cakes.
