low fat turkey sloppy joes
Low-Fat Turkey Sloppy Joes by ajrs mom
1/2 tsp olive oil
1/2c. celery, sliced ( I omitted)
1/2c. onion, chopped
1/2c. red & green peppers, chopped ( I use all green to save $$)
2c. turkey light meat, skinless, cooked & cubed ( I use 3% fat ground turkey and brown it in the olive oil
1c. ketchup
3 Tbs. white vinegar
2 Tbs. brown sugar, packed ( I only use 1 TBS)
1/2 tsp dry mustard-this is needed but I did use regular spicy brown mustard in a pinch and it worked fine
8 hamburger buns- I use whole wheat
Brown turkey or chunk cooked turkey. In a skillet, heat oil. Add celery, onions & peppers, cook until lightly browned. Add cooked turkey, ketchup, vinegar, br. sugar & mustard. REduce heat to low and simmer 15 minutes--Doesnt really need to simmer that long. Spoon into buns Enjoy
