Scalloped Potatoes And Turkey

1 lb. ground turkey breast or 1 lb. lean ground beef
1/2 teaspoon ground thyme
1/8 teaspoon pepper
1 (4.9-oz.) pkg. Hungry Jack® Cheesy Scalloped Potatoes
2 medium red bell pepper, seeded and chopped
1 medium onion, thinly sliced
2 cups water
1 cup milk
2 tablespoons margarine or 2 tablespoons butter

. Spray large skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add ground turkey; cook until browned and no longer pink, stirring frequently. Stir in thyme and pepper.

2. Place potato slices into ungreased 2 to 2 1/2-quart casserole dish. Stir in browned turkey, bell pepper and onion.

3. In same skillet, combine sauce mix, water milk and margarine or butter. Bring just to a boil (about 4 minutes), stirring occasionally, remove from heat and pour sauce over potato mixture. With back of spoon, press down potatoes until covered with sauce.
4. Bake at 425° F. for 25 to 30 minutes until potatoes are tender. Allow to stand 5 minutes before serving to thicken sauce.
