Turkey-Cheese Pot Pie

Pippe originally posted this recipe in What's for Dinner February 2007:

Turkey Cheese Pot Pie

2 ready made unbaked pie crusts
2 cups cooked, chopped turkey
1 pkg. frozen vegetable mixture (broccoli, carrots, water chestnuts) - thawed
1 can cream of chicken/mushroom soup
1/2 can milk
1/2 teap. grated nutmeg
1/4 teasp. ground pepper
1 cups shredded cheddar cheese

Preheat oven to 350 degrees.

Put bottom pie crust in 9-10" pie pan ( I use 10" glass). Layer in turkey and veggies.

In a bowl mix together soup, milk, nutmeg & pepper. Pour over turkey & veggies. Sprinkle cheese over top & cover with top crust. Crimp and decorate as desired but be sure to make steam vent holes

Bake for 50-60 minutes until nicely browned & is bubbly.

Cool slightly & serve with cranberry sauce & a Waldorf salad. Serves 4-6

Options: cooked chicken for turkey, other veggie mixtures, other cream of soup, other cheese. You can add sliced mushrooms. You can also use only a top crust & bake in square 9" pan for 45-50 min.
