OMG..four threads on this board! lol..GUMBO weather!

well...its gumbo weather finally...and for someone that is NOT a native of Cajun country..I'm going to attempt to do a chicken and sausage gumbo..my favorite!
I would rather have a native of SW Louisiana cook it ..but alas..I guess I'll give it a try. My neighbors gave me lessons but I think theres is still soooooooooo much better then mine.
What is your favorite receipe for gumbo..or do you HAVE a receipe? My neighbor justs keeps "adding to the pot"...
I never see her measure a dang thing and her cooking is YUMMY!

Chicken & Sausage Gumbo

We just had chicken & sausage gumbo yesterday! DH makes it when we have it. He is a native cajun and I am just a transplanted Texan. I don't believe he follows a "recipe" either! MY MIL (now deceased) used to be the BEST cook and I don't believe she had a written recipe for anything she made!

My favorite gumbo is shrimp gumbo with eggs in it! YUM!!!!

OK I'll bite, can anyone explain what in a gumbo? I take it it's a cold weather dish?

Yes, it really hits the spot in cold weather....or rainy weather...

It is a roux based sort of stew with onions, bell peppers and then some sort of meat. The most popular gumbos are either seafood(shrimp, crab, catfish nuggets, oysters & crawfish) and chicken & sausage.

It is served over rice.

It is d'lish!!!

Gombo just sounds so funny, no offense to those who made it up, but sounds like it would be a good winter warmer, seafood one looks to be delicious.
