Pineapple Cheese Ball

  • Pineapple Cheese Ball

    Two 8oz packages cream cheese
    8-1/2 oz can of crushed pineapple
    2 cups (8-9oz) pecans, finely chopped
    1/4 cup (1-1/2oz) green pepper, chopped
    2 tablespoons green onion, chopped
    1/2 teaspoon salt

    Drain crushed pineapple. Mix all ingredients except 1 cup of
    chopped pecans. Form into ball. Refrigerate. Roll in remaining
    1 cup of finely chopped pecans. Serve with assorted crackers.

    For a more elaborate setting, form into small "cake" shape by
    pressing into a small cake pan. "Ice" the cake of cheese with
    softened cream cheese. Decorate with tinted cream cheese
    and pecans.
