Homemade Hummus

1 - 15 oz (or so) can of garbanzo beans (chickpeas)
1/4 small onion, minced well
1/4 - 1/2 c tahini (sesame butter) (get it at a health food store or middle eastern shop or fresh market if your local grocery doesn't carry it)
1/4 - 1/3 c water (to taste)
1-3 cloves garlic, minced (to taste, but **don't** leave it out entirely!)
juice of 1 lemon
1/4 tsp salt

1-4 Tbs olive oil
1 - 3 sprigs spring onion (thinly sliced lengthwise)
4-6 pita breads sliced into quarters

Drain the grabanzos. (You can use the juice in place of the water, but I don't like the flavor as much.) Put garbanzos in food processor or blender and blend/process until pureed. Add tahini, onion, garlic, lemon juice and salt. Process again until very well mixed. Add water a little at a time until the consistency is pleasing to you (some like it thicker than others do).

Chill for about an hour or so, if desired.

Serve in a shallow bowl with "some" olive oil poured over it and finely sliced (lengthwise) spring onions on top as a garnish.

Dip pita bread and eat - yummm!
