Sante Fe Stew Ole'

1 TBSP vegetable oil
1 1/2# beef stew meat, cut into bite-size pieces
1 can (28 oz) stewed tomatoes, undrained
2 medium carrots, cut into 1/4 inch slices
1 medium onion, coarsely chopped
2 TBSP diced green chilies
1 pkg. (1 oz) Taco seasoning
1/2 tsp Seasoned Salt
1/4 cup water
2 TBSP flour
1 can (15 oz) pinto beans, drained


In Dutch oven, heat oil. Brown stew meat. Add tomatoes, carrots, onion, green chilies, taco seasoning and seasoned salt. Mix well.

Bring to a boil over med-high heat; reduce heat to low and cook, covered, for 40 mins.

In small bowl, combine water and flour; mix well. Stir into stew mixture. Add pinto beans and cook over low heat for 15 mins.


Serving suggestions: Serve with cornbread, or lots of warm corn and flour tortillas.
