Magic Soup

From LuvMyFF in Jan 2003 WFD thread

MAGIC SOUP serves 5

7 pieces of turkey bacon
1 1/2 tsp olive oil
1 carrot-peeled & chopped
2 stalks of celery-chopped
1/2 lg onion chopped
2 can Swanson's chicken broth(4 cups total)
4-5 potatoes-peeled & chopped
roasted garlic powder
fresh ground pepper
dark chili powder
1.5-2 C of shredded cheddar cheese
2 tsp tomato paste

Cook the bacon in a stockpot. Once cooked remove from pan, chop and set aside. Add olive oil to pan. Add the carrot, celery & onion. Cook until the vegetables are tender, about 4 minutes. Add chicken broth, potatoes and seasonings to taste. Stir and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15 mins. Add cheese and stir until melted, do not boil. Stir in bacon and tomato paste. Stir until well combined. Serve. My kids loaded more cheese into their soup bowls.

The reason that it is "magic soup" is that once it is in the bowl it looks orange and once you stir it in your bowl it changes colors. I think that was the thing my kids liked the best.


Once we decided that it was good, I sat down quickly to try and remember what I did. LOL One thing that I will do different next time is puree or mash some of the potatoes up so that it is a little bit thicker.
