Crockpot Kielbasa Potato Soup

6 1/2 oz kielbasa, cut into 1/2" pieces and then into quarters
1 small onion, diced
2 tsp minced garlic
2 tsp celery seed - important ingredient don't leave out!
1 tbsp parsley flakes
1 tsp kosher salt
1 tsp coarse grind black pepper
6 cups water
2 1/2 pounds potatoes, peeled and cubed into 1/2" chunks
1 stick butter - use real butter
8 tbsp flour
1 cup skim milk'

Put water into crockpot (I used a 4 quart and it filled it when all ingredients were in it). Add kielbasa, onion and other seasonings to crockpot and set to HIGH. Once it begins to simmer, reduce heat to LOW for 1 hour. Add potatoes to crockpot and return setting to HIGH. Cook till potatoes are cooked through, about 1 1/2 hours depending on your cooker. Melt butter in a skillet and add flour all at once. Stir constantly till very well mixed, then whisk in milk till blended. Remove from heat. Stir well into the soup and let cook another 30 minutes in crockpot.
