Curried sweet potato soup

This recipe was originally posted by Bilby in June 2012 What's for Dinner thread.

Curried sweet potato soup

75g butter
2 cloves garlic
1/2-1 tsp curry power
500g sweet potato, peeled and cut into 1cm cubes
2 tsp stock powder (vegetable or chicken)
1 cup water
3 cups milk
1/4 cup cream (optional)

Melt butter in a large saucepan, add the garlic and curry powder and cook for a couple of minutes.
Add the sweet potato and cook again for a couple of minutes.
Add the stock powder and water, cover and cook for about 10 mintues or until tender.
Blitz with Bamix or process in a food processor. Make sure it is really smooth. Add miik to get soup to your required thickness and reheat.
If using cream it can be added at this stage, but do not boil.

You can play around with the quantities of all the ingredients.
Often I just add extra stock powder and water and don't bother with adding the milk and cream.
