Sweet Potato Corn Chowder

  • 12 oz kielbasa sausage, halved lengthwise and cut into 1/2" slices
    1 large onion, chopped
    2 stalks celery, chopped
    1 tbsp minced garlic
    3 tbsp all purpose flour
    1 1/2 tsp ground cumin
    1 1/2 tsp chili powder
    1 tsp cajun seasoning
    6 cups chicken broth
    1 16 oz pkg frozen whole kernel corn OR 3 cups fresh sweet corn kernels
    2 small sweet potatoes, cubed
    12 oz skinless, boneless chicken breast halves, cut into 3/4" pieces
    1 cup skim milk
    1 tsp coarse grind black pepper

    In a dutch oven brown the kielbasa in 1 tbsp olive oil. Stir occasionally and then add onion, celery, and garlic. Cook and stir 5 minutes. Stir in flour, cumin, chili powder and cajun seasoning. Cook and stir 2 minutes more. Stir in chicken broth and bring to a boil. Add corn, sweet potatoes, and chicken. Return to a boil and reduce heat. Simmer, covered about 20 minutes or till sweet potatoes are tender. Stir in milk and pepper and heat through. Makes 8 main dish servings
  • Cat Lover, thanks so much for sharing this recipe! I have been trying to get more sweet potatoes into my diet, but I can't say that I like them that much. This recipe sounds like it'll be really good. I can't wait to try it!
  • We loved it! You can also add cubed sweet potatoes to your stews and other soups. I also sometimes add some to my regular potatoes when I fix mashed or whipped potatoes; gives them a nice color too!
